Completely different from Myeongdong Kyoja’s bold garlic punch.
Hansung’s broth is lighter and cleaner — less garlic, more depth.
The kind of bowl that doesn’t shout at you.
Dumpling Soup (Manduguk /12,000 won)

The dumplings are made by hand, with thin wrappers and juicy filling.
This is one of the most popular dishes among regular customers.
Can you see how many dumplings there are?
The portion is really big.
They also serve half a bowl of rice, so be sure to mix it in and enjoy with the soup
Meat (Boiled Pork /30,000won)

Perfectly cooked pork slices that are incredibly tender.
The meat is mild and pairs well with kimchi and garlic on the side.
Assorted Pancakes (Modeum Jeon/38,000won)

Mushroom, pollock, zucchini, shrimp
each fried at the right oil temperature
so the outside crisps without drying out the inside.

This is the basic side dish set at Hansung Kalguksu.
The water kimchi is really refreshing and delicious. Make sure to ask for a refill!

Hansung Kalguksu is a place I visit for different reasons
depending on the time of day.
In the evening, many people come here
to enjoy generous dishes with drinks.
At lunchtime, it’s one of my favorite spots
for a comforting bowl of noodles.

What Is YukKal?
“YukKal” is short for Yukgaejang Kalguksu
two Korean comfort foods in one bowl.
Yukgaejang is a spicy, deeply flavored beef soup
that takes hours to develop properly.
Kalguksu is handmade noodles.
Here you eat the two together, and when the noodles are gone,
you finish with rice in the remaining broth.

The broth is deep, spicy, and loaded with beef flavor.
A bowl that actually tastes like it took all day
which, for the record, it does.

The starch left in the broth thickens it slightly,
and that last spoonful of rice is usually the best part of the meal.

Why I Keep Coming Back

Before buldak noodles and spicy instant ramen became a whole thing,
truly spicy broth dishes were hard to find.
I’ve always loved that sharp, deep heat
— the kind that warms you from the inside rather than just burning your tongue.
When that craving hit, this was the only place I trusted.
It still is. Instant noodles can fake a lot of things,
but they can’t fake this broth.
Whenever I want that specific deep,

Spicy Buckwheat Noodles (Bibim Memil /11,000won)
The sauce uses Korean chili flakes from Yeonggwang.
It reminds you a little of tteokbokki sauce
It’s slightly sweet, mildly spicy, and incredibly addictive.
Hard to stop eating.

Hot Pot Noodles (Nabe Udon /10,000 won)
A steaming pot with handmade fish cake and a soft egg on top.
Rich, warming broth — especially good from autumn through winter.
The pickled radish (danmuji) here is genuinely good.
I refill it at least three times every visit —
which probably tells you more about the overall standard of this kitchen
than anything else I could say.

You should pay when you order (creditcard ok)
The turnover is fast, the lines move constantly,
and collecting payment at the door would slow everything down.
It’s just more efficient
Why These Are the Best Noodles in Seoul
Beyond Myeongdong Kyoja
Myeongdong Kyoja has earned its reputation.
In my opinion Their kimchi, might be even better than the noodles.
But the three restaurants on this list are doing something different.
The noodle dishes themselves are the point.
None of them are trying to be trendy
They rarely appear in guidebooks.
That’s exactly why they’re worth finding.
